Quick Lentil Soup

INGREDIENTS:

A TABLESPOON VEGETABLE OR OLIVEOIL

1 ONION (MINCED OR PRESSED)

2 CLOVES OF GARLIC (MINCED OR PRESSED)

1 CARROT AND CELERY CHOPPED

1 TEASPOON GROUND CUMIN

3 CUPS DICED TOMATOES

2 CUP COOKED AND DRAINED LENTILS

1 AND A HALF CUPS VEGETABLE STOCK 1 TEASPOON SALT

DIRECTION:

HEAT THE OIL IN A LARGE POT AND ADD INGREDIENTS (EXCEPT FOR TOMATOES ,LENTILS AND VEGETABLE STOCK )  COOK FOR ABOUT 10 MINUTES ALL VEGETABLES HAVE SOFTENED NOW ADD TOMATOES LENTILS VEGETABLE STOCK AND SALT LET IT BOIL OVER THEN REDUCE HEAT COVER AND LET SIMMER ABOUT 15 MINUTES THEN SERVE AND ENJOY
