TOMATO AND CHICKPEA SOUP

INGREDIENTS:

2 TABLESPOON OLIVE OIL

2 ZUCCHINIS CUT INTO QUARTER INCH CUBES

1 ONION CHOPPED 3 CUPS FRESH TOMATOES CHOPPED

1 TABLESPOON TOMATO PASTE

4 CUPS VEGETABLE STOCK

2 CUPS COOKED BEANS

1 BUNCH OF SPINACH

1 TABLESPOON OF SALT

1 QUARTER TABLESPOON BLACK PEPPER

1 CUP GRATED CHEESE

DIRECTION:

SOAK CHICKPEAS IN COLD WATER OVER NIGHT DRAIN AND COOK FOR 20 MINUTES EMPTY IN LARGE BOWL ADD INGREDIENTS (EXCEPT FOR SPINACH) COOK FOR 30 MINUTES ADD THE SPINACH AND STIR IN THE SALT AND PEPPER  SERVE WITH CHEESE AND ENJOY!!!!!
