SWEET AND SOUR ROASTED BEET SALAD

INGREDIENTS:

1 LB FRESH BEETS PEELED AND CUT INTO CHUNKS

1 ONION CUT INTO CHUNKS

2 TBSP OLIVE OIL

1 TBSP VINEGAR

2 CLOVES OF GARLIC CHOPPED

1 TSP SALT

1/4 TSP PEPPER

1 TBSP FRESH MINT LEAVES CHOPPED

DIRECTIONS:

PREHEAT OVEN AT 400 IN A LARGE OVEN PROOF POT COMBINE  ALL INGREDIENTS PLACE IN OVEN AND BAKE FOR 45  MINUTES  UNTIL THE BEETS ARE TENDER LET COOL SLIGHTLY THEN REFRIGERATE UNTIL COLD BEFORE SERVING ADD  MINT  TOSS WELL SERVE AND ENJOY !!!!!!!!!
